Meatless Monday - Veggie Pasta Soup

This is one of my favourite soup dishes (maybe because it has pasta in it :) ). I had it first at an Italian friend's place and have loved it ever since. Versatile and easy, you pick whichever veggies you have on hand and throw them in! Just make sure you have a small pasta shape in your pantry at all times. Read on for more tips :)


Here are the veggies I decided to use but you are of course free to add whatever you have and want to use, I just like this more wintery combo. You will need a frying pan and a bigger pasta / soup saucepan.

I, like many of the locals here in Nice, avoid carnival! It has become too commercial and is more for visitors we feel than for us locals. But friends came into town and I wanted to meet my friends' new little baby boy, so we dared to venture into town for lunch and a wander. Then, a friend's four year old fancied going up into the Ferris wheel on Place Massena. Despite having lived here for on and off 10 years, I have never gone up on the wheel (La Grande Roue) in French so G and I decided to fork out the 7.50€ each and take in the gorgeous view.



Meatless Monday - Red Curry Noodles with loads of veggies

Back to Meatless Monday-ing :) I have a new favourite mid-week meal. Easy, quick and full of veggies. I took a short cut by having ready made red curry paste but I did add some seasoning to it, some extra ginger, garlic, lemongrass and kaffir lime. I have made it a few times now and served it with noodles and with rice when I had some leftovers. Here is the result the first time I tried it after work one night:


You can basically use whichever veggies you happen to have in the fridge or the freezer, but here is what I have used the first night, I had cabbage, coco beans, bean sprouts, peppers, frozen edamame and straw mushrooms. I also used some onions and fried up some shallots until crispy, as well as some tofu.

Meatless Monday - Steamed Chips (fries) in the oven!

Yes, I steamed my chips. Don't you? You must be thinking I am a bit crazy right now but they are amazing! Quick and easy, and healthier than deep frying them. Read on for the method :) It was inspired by this recipe I found online.

Home Cooking - Coconut and Chocolate Scones - The Best Ever!

You may think I am being  a little forward with my claim of 'the best ever' but two people told me they were the best scones they have eaten, another just said 'mmmmmmmmmmmmmmmmmmmm' repeatedly (even over instant messenger at one point) and everyone just generally said they were amazing! So hopefully you will forgive me ;)

I was inspired by a recipe I found on Pinterest and I globally followed it but changed a few small details. I am amazed that it worked so well the first time! Well done to the author - you can find the link here:

Meatless Monday - Mushroom and Sun Dried Tomato Pasta

This is a good pasta dish for when you don't know what to cook and don't have much at home besides some mushrooms. All you need is pasta, mushroom, onion, garlic and sun-dried tomatoes plus of course olive oil, salt and pepper.


I find this dish works best with firm mushrooms, button mushrooms rather than the big ones that go soggy.
